As many as you have, each with its own phone.
Yes. Put a phone on each gate you want to cover. Several gatekeepers can also scan at the same gate at once, which is what keeps a single busy entrance moving at 7am — they are not queued behind one device, and there are no shifts to set up.
Every arrival records which gate it came through, so you can see how your entrances are actually being used.
